Spaghetti and Sardines in Chilli, Lime and Coriander (Cilantro)

Staying on my own in Spain for a month, I wanted to make something quick, easy and healthy. Needing to fuel my long run the next morning, I required some good carbs. Now, I love the Mediterranean diet with fish, pasta, olive oil with herbs and seasonings. The local supermercado had these simple ingredients and boom…this spectacular dish landed.

With 84g of carbohydrates, it is a really good option for a “night before long run” meal. Probably the best thing about this one is that it’s done in less than 15 minutes.

Spaghetti and Sardines Ingredients:

500g dry spaghetti
2 x 105g cans of Sardines with Chilli, Lime and Coriander (cilantro)
15 baby plum tomatoes (cherry tomatoes will do, just not as sweet as baby plums)
2 tbsp Extra Virgin Olive Oil
2 tsp minced garlic
1 tbsp Italian Seasoning 
1 tsp salt

Method:

  • Boil large pot of water with salt
  • Slice baby plum tomatoes in half
  • Add the full pack of spaghetti to the water and boil until al dente (soft, but still a bit of bite)
  • Drain the spaghetti and add back to pot
  • Drizzle the olive oil
  • Add the 2 cans of sardines, sliced tomatoes, minced garlic and Italian Seasoning
  • Stir to mix, serve and enjoy!
