Crockpot Shredded Chicken
This crockpot shredded chicken is amazing. I finished my long run, then stopped off for brunch that included steak and eggs along with a good strong americano. When I got home, I knew I wouldn’t need to eat for another 4 hours. However, I ran 20 miles and I knew I wouldn’t have energy to make dinner. So I pulled out the crockpot and four frozen chicken breasts. I put a few ingredients together and four hours later I had the most amazing crockpot shredded chicken
Crockpot Shredded Chicken Ingredients:
4 or 5 frozen chicken breasts (600g)
1 chicken stock cube
300ml boiling water
1/2 tsp salt
1/2 tsp cracked black pepper
1 tsp onion powder
1 tsp garlic granules
2 tsp smoked paprika
Method:
Place the chicken breasts on the bottom of the crockpot.Sprinkle all the seasonings over the top of the chicken. Dissolve the chicken stock cube in a jug of 300ml boiling water and pour over the chicken breast. Cover the crockpot and put it on high for four hours.
After four hours check the chicken is fully cooked. If so, take two forks and start shredding the chicken by pulling it apart in opposite directions while it’s still in the liquid. That’s it!
I served 150g of chicken on a toasted burger bun, and added low-fat homemade coleslaw and two tablespoons of sauerkraut. Some different serving suggestions would be:
- serve it on a bun of your choice and add lettuce, tomatoes, avocado
- serve it over rice or another grain of your choice
